Chicken Tandoori is one of my favorite dishes, the meat is so tasty and tender although I love to eat it with naan but it tastes very good alone or with salad! Tandoor means oven (in Persian we call it: Tanoor). So it’s usually cooked in the oven, but at home and to cook it fast, I usually grill on the stove and it tastes good!

Ingredients | Servings: 2

3-4 chicken thighs/legs
1 red Chili
2 clove of Garlic
Little Extravirgin Olive Oil or Coconut oil
salt
5g of ginger
1 teaspoon Turmeric
2-3 tbsp of White yogurt
1 tea spoon Kashmiri chili
2 teaspoon of Tandoori Masala
1 teaspoon of Coriander Powder
Chopped Spring onions
1 tsp cumin

Preparation

1- Clean and cut the surface of the chicken as you see in the pic
2- Grate garlic, ginger and chop the fresh chilly
3- Add the turmeric, tandoori spice, kashmiri chilli powder, oil and salt
4- Mix all till you have a paste of spices
5- Add chicken tights/legs and massage the paste all over
6- Add yogurt
7- Mix all together
8- Oops almost forgot! add also finely chopped green onions
9- Cover the bowl with a foil and let it rest for 30 mins to 1 hour in room temperature
10- (Optional) slice some veggies, here I used zucchini and eggplants
11- Put veggies aside with some salt so they lose water and cook quicker
12- Put the grill pan on the medium heat and wait 2 mins till it gets very hot
13- Place the marinade chicken on the grill i suggest 8 mins each side
14- Turn it over and let it grill for other 8 mins
15- Before finishing with the chicken add the eggplants and let them cook in the juice of tandoori chicken
16- Remove chickens continue to cook veggies till they darken in color specially eggplants

Serve with some freshly chopped spring onions and its done! 🙂
