Mirza Ghasemi – Smocked Eggplants Stew

[NO BREAD for Keto or low carb diet] Mirza Ghasemi is typical north Iran dish with eggplants, tomato and lots of garlic! It’s delicious with Barbari bread or Persian rice or even alone!

Ingredients | Servings: 2-3

5 long eggplants
5 medium Tomatos
Ghee or oil
1 teaspoon Turmeric
3 Eggs
ground black pepper
salt
2 Garlics

Preparations

1- Wash the Eggplants and put them on an oven tray
2- Put them in the oven for 40-50 mins on 200C°/390F°
3- After oven place them on a hot grill and let their skin slightly burn this helps to gain a smoky taste
4- Peel their skin off when they cool down
5- Put them in a bowl and mash them
6- Put the tomatoes in boiling water and let them stay for only 1 minute
7- Peel the skin off
8- Cut them in pieces, not so small!
9- Grate 2 garlics in a pan then add ghee, salt, black pepper and turmeric stir fry them gently for 1 min on medium heat
10- Add the tomatoes (and yes i changed the spoon with a bigger one!) turn up the heat
11- Cook the tomatoes until they softens and lose water, see when you make a way with the spoon it’s not runny
12- Time to add the Eggplants and mix them with the rest of the ingredients
13- Continue to stir fry them till the eggplants softens. It might take 15-20 mins.
14- When they are cooked well add some generous amount of oil or ghee. Mix them well now it’s so shiny!
15- Make some wholes with the spoon and add 3 eggs But don’t stir them!
16- Even make some more space with spoon so the egg whites have more space to spread while they are cooking (don’t stir them yet) (no stirring!)
17- When the eggs are half cooked gently sitr them up with other ingredients. The bites of eggs should be visible like the eggplants and tomatoes

That’s it! Mirza ghasemi is ready! p.s. again don’t eat bread or rice if you are in ketogenic or low carb diet!
