Khoresht Gheimeh – stew of yellow split peas

Khoresht Gheime is a popular dish in Iran. It’s made of meat, split peas and tomato concentrate (or puree) and onions. Khoresht in Farsi (Persian) means stew. It’s always served with rice. The “mazzes مزه” that you can combine this dish with are so vast: plain yogurt, Shirazi salad, raw onions, torshi (Iranian pickles), herbs… with these Gheime tastes even better!

Ingredients | Servings: 2

white onion
1 teaspoon Turmeric
300g/10.5oz chopped veal or lamb meat in pieces of 3-4cm/1-2in
1 cup Tomato puree
Ghee or oil
ground black pepper to taste
salt to taste
Thai/basmati/jasmin rice 2 cups
1 Potato
2 tbsp Yellow split peas
4-5 Dried lemon


1- Chop finely the onions
2- Stir fry them till they get soft
3- Add spices and stir for 2-3 mins
4- Add the chopped meat
5- while meat is cooking, wash the yellow split beans
6- Add them to the pot

Stir for 10 mins the beans and meat, this helps the beans become tastier because they are cooking in the juice released from meat

7- Add the tomato puree and continue to stir a bit more
8- Add 1-2 cups of water and let it simmer for 1 hour

9- In the meanwhile, wash the dried lemons, put them in a bowl
10- Pour hot water on them
11- Let it stay for 30mins till they get soften
12- Making some holes in the soften dried lemons
13- Add them to the stew pot
14- Let the stew simmer for other 30 minutes then it is ready!!

Preparing Potato for topping

15- Cut the potato into slices to make fries
16- Add them to the hot frying oil – max 180°C(360°F). Fry them till they are crispy
In a small medium bowl pour the stew and put the fries on top. The stew is ready to serve!
