This recipe is so simple and can be good as a starter or side dish. I like to have this as a kind of dip. It’s low carb but tastes great with crunchy bread.


Extravirgin Olive Oil
1 onion
1 onion
750g/26.4oz Broccoli
Juice of 1 lemon


1 glass of white wine
1 glass of white wine

half of Garlic
2 fillets of anchovies (optional)

Chop the onions in chunks, their size doesn’t matter because later we’ll whisk them with other ingredients.

On medium heat, in a big pot, pour oil and add anchovies (optional), when they dissolve in oil add onions, add some pepper and salt. Stir fry till they got transparent and dry.

Add 1/4 cup white wine. Stir till all the alcohol evaporates. Then put them aside.

In the same pot (without cleaning it) add half a cup of water.

Add the broccoli. put the lid on.

Let them boil for 25 mins

Remove form the heat and grate half a clove of garlic and add lemon juice.

Pour extra virgin olive oil to taste (i used around 50g/1.7oz), mix everything together.

it has a light color because I used broccoli’s stems too

Check the seasoning before serving. Top with some roasted Pine nuts to give a good crunch and serve it with a drizzle of extra virgin olive oil.
