Cheesecake with Bitter Orange Marmalade

Cheesecake is one of my childhood favorites. My mom got the recipe from her German friend as “Philadelphia kuchen” back in 1993. Since then I have had a vast variety of this sweet and each time it was very delicious, this version is with bitter orange marmalade. Enjoy 🙂

Ingredients | Servings: 45

90g/3.1oz Digestive biscuits
3 tsp Bitter Orange Marmalade
1 tbsp honey
60g/2.1oz of butter
lime
25g/1oz fresh cream
2 tsp icing sugar
zest of half orange
Vanilla just a pinch
150g/5.2oz Cream cheese
50g/1.7oz Mascarpone

Preparation

Cut the butter in half. half of it goes in the crust and the other half goes inside the creamy part

1- Put the biscuits in the mixer
2- Blend them
3- Add 30g/1oz of melted butter
4- Add 1 tbsp of honey
5- Mix all the ingredient well
6- Put the biscuit mix into a cake pan of 16cm/7inch
7- Press it well
8- Cover the top with a plate and put it in the fridge for 30mins
9- In a bowl add Cream cheese + Mascarpone + fresh cream + lime and orange zest and half of lime juice
10- Mix well then add other 30g of melted butter (not so warm)
11- Add icing sugar
12- Add a bit of vanilla
13- Add the bitter orange marmalade
14- Mix them well and bring the cake pan out of fridge
15- Put the creamy mixture in the container
16- Spread it evenly
17- Put it in the fridge and overturn a bowl on it
18- Let it there till the next day or at least 6-8 hours

The day after, slowly open the cake pan and if it was sticking to it, put a warm cloth for 10 seconds around it then try again. (it should work)

This sweet is great with coffee or tea. Enjoy 😉
